Blueberry Balsamic Vinaigrette

Description

This Blueberry Balsamic Vinaigrette is a tasty, easy to make salad dressing recipe that is perfect for blueberry season. It is made with real blueberries, avocado oil, balsamic vinegar and a dash of maple syrup.


Ingredients

  • ¾ cup blueberries
  • ½ cup avocado oil
  • ¼ cup balsamic vinegar
  • 1 tsp maple syrup


Instructions

  1. Add the blueberries, avocado oil, balsamic vinegar and maple syrup to a food processor. Blend for about 30 to 45 seconds, until the mixture is smooth.
  2. Pass the dressing through a fine mesh sieve to remove any small blueberry chunks. Discard the blueberry pieces.

Notes

  • Storage: Store leftover blueberry dressing in an airtight container in the fridge for up to 7 days. Mix well before serving.
  • Thinning the dressing: If your dressing is too thick or if you prefer a thinner dressing, add in a bit of water, 1 tablespoon at a time until you reach your desired consistency.
