This Panera Greek Salad Dressing is an easy to make copycat recipe of Panera Bread’s delicious Greek Salad Dressing. It takes just 5 minutes to make and is perfect for making a homemade version of Panera Bread’s Grilled Chicken Greek Salad.

  • Slightly Tangy — Panera Bread’s dressing is known for being a bit tangy, and this dressing is too. It uses more vinegar than a typical vinaigrette, but not too much that it is overpowering. If you enjoy tangy dressings, you will like this vinaigrette!

Ingredients & Substitutions

The ingredients needed to make the Panera Bread Greek Salad Dressing.
  • Olive Oil:  Use a high quality extra virgin olive oil. You can use another type of oil as a substitute, such as sunflower oil, avocado oil or vegetable oil.
  • Apple Cider Vinegar: Apple cider vinegar is one of the main ingredients in this dressing. Use a high quality apple cider vinegar for the best flavor. If you don’t like apple cider vinegar, you can use white wine vinegar as a substitute.
  • Garlic: You’ll need a clove of freshly minced garlic. If you don’t have fresh garlic, you can use ⅛ to ¼ teaspoon of garlic powder.
  • Lemon Juice: Use freshly squeezed lemon juice for the best taste. However, if needed, you can use a high quality bottled lemon juice.
  • Dried Herbs: For this dressing, you will need a few types of dried herbs including tarragon, oregano, parsley, rosemary and thyme. If you are missing one, that is ok, you can replace it with more oregano or parsley.
  • Salt & Pepper: A dash of salt and pepper bring out all the other flavors in the dressing.

Step By Step Instructions

Step 1: Add the olive oil, apple cider vinegar, garlic, lemon juice, tarragon, oregano, parsley, rosemary and thyme to a mason jar.

Step 2: Shake the jar vigorously for 30 seconds until the dressing is well emulsified. Taste and add salt and pepper as needed. Shake again before serving.

Expert Tips

  • Shake extra well. This dressing doesn’t mix together quite as easily as other vinaigrettes. You have to shake this dressing really well to get it to emulsify properly.
  • Use a blender. If you are having trouble making this dressing creamy just by shaking it, try using a blender or food processor. Make sure you hold the lid on tightly if using a food processor so it doesn’t spray everywhere.
  • Store in the fridge. Store this Greek salad dressing in an airtight container in the fridge for up to a week. Shake well before reusing.
  • Adjust the tang. This dressing is slightly more tangy than a classic vinaigrette dressing. If you want to make it sweeter, reduce the amount of apple cider vinegar.

Recipe FAQs

Why does the dressing solidify after refrigeration?

It is completely normal that this dressing solidifies slightly after being refrigerated. Let the dressing sit at room temperature for 10 minutes before using it. Then shake it vigorously to recombine it before pouring over your salad.

Can I use fresh herbs to make the salad dressing?

Yes. You can replace the dried herbs with fresh herbs if you have them. Finely mince the herbs and use ¾ teaspoons of each fresh herb, instead of ¼ teaspoons of dried herb.

Description

This Panera Greek Salad Dressing is an easy to make copycat recipe of Panera Bread’s delicious Greek Salad Dressing. It takes just 5 minutes to make and is perfect for making a homemade version of Panera Bread’s Grilled Chicken Greek Salad.


Ingredients

Scale
  • ½ cup olive oil
  • ½ cup apple cider vinegar
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice, freshly squeezed
  • ¼ tsp tarragon, dried
  • ¼ tsp oregano, dried
  • ¼ tsp parsley, dried
  • ¼ tsp rosemary, dried
  • ¼ tsp thyme, dried
  • salt & pepper, to taste


Instructions

  1. Add the olive oil, apple cider vinegar, garlic cloves, lemon juice, tarragon, oregano, parsley, rosemary and thyme to a mason jar.
  2. Put on the lid and shake vigorously for 30 seconds until the dressing is well emulsified. 
  3. Taste, and add salt and pepper as needed. Shake well again before pouring over your favorite salad. 

Notes

  • Storage: Store this Greek Salad Dressing in an airtight container in the fridge for up to a week. It is normal that it solidifies slightly after storage. If this happens, let it sit at room temperature for 10 minutes before shaking it well again to recombine the ingredients.
  • Fresh Herbs: You can replace the dried herbs with fresh, finely minced herbs. Use ¾ teaspoon of each fresh herb instead of ¼ teaspoon of dried herbs.
