Description

This Panera Greek Salad is an easy to make, homemade version of Panera Bread’s delicious Greek Chicken Salad. Topped with Panera’s Greek Dressing, this is a salad recipe you’ll want to make again and again.


Ingredients

  • Panera Greek Salad Dressing:
    • 1/4 cups olive oil
    • 1/4 cups apple cider vinegar
    • 1 garlic clove, minced
    • 1/2 tbsp lemon juice
    • 1/8 tsp tarragon, dried
    • 1/8 tsp oregano, dried
    • 1/8 tsp parsley, dried
    • 1/8 tsp rosemary, dried
    • 1/8 tsp thyme, dried
    • salt & pepper, to taste
  • Panera Greek Salad With Chicken:
    • 2 cups romaine lettuce, chopped
    • 1/2 cup grilled chicken, cut into strips
    • 1/3 cup grape tomatoes, halved
    • 1/3 cup feta, crumbled
    • 1/3 cup cucumbers, sliced
    • 1/4 cup red onions, sliced
    • 1/4 cup Kalamata olives, pitted
    • 1/4 cup pepperoncini peppers, sliced


Instructions

  1. Make the Greek Salad Dressing. Add the olive oil, apple cider vinegar, garlic clove, lemon juice, tarragon, oregano, parsley, rosemary and thyme to a mason jar. Shake vigorously for 30 seconds until well combined. Taste and add salt and pepper as needed. Shake again before using.
  2. Make the Chicken Greek Salad: Add the romaine lettuce, grilled chicken, grape tomatoes, feta, cucumbers, red onions, Kalamata olives and pepperoncini peppers to a large salad bowl. Pour the dressing on top and toss the salad well before serving.

Notes

  • Storing The Dressing: You can make a large batch of this Panera Bread Greek Salad Dressing and store the leftovers in an airtight container in the fridge for up to a week.
