Description

This Strawberry Spinach Salad With Almonds is a delicious, summer salad recipe that you will want to make again and again throughout strawberry season. Made with spinach, toasted almonds and topped with a strawberry basil vinaigrette dressing.


Ingredients

  • Strawberry Basil Dressing:
    • 1 cup strawberries, sliced
    • ½ cup + 2 tbsp avocado oil
    • ¼ cup fresh basil leaves
    • ¼ cup white wine vinegar
    • 1 tsp maple syrup
  • Strawberry Spinach Almond Salad:
    • 4 cups spinach leaves
    • ½ cup strawberries, sliced
    • ¼ cup sliced almonds, toasted
    • ¼ cup goat cheese, crumbled


Instructions

  1. First, make the Strawberry Basil Dressing. Add the strawberries, avocado oil, basil leaves, white wine vinegar and maple syrup to a food processor. Blend until smooth.
  2. Strain the strawberry basil dressing through a sieve, pressing down with the back of a spoon if needed to make it pass through. Discard the small chunks of basil and strawberry.
  3. You should be left with a smooth, thick and creamy strawberry dressing. If the dressing is too thick, stir in a tablespoon of water to thin it out to your desired consistency.
  4. Next, make the Strawberry Spinach Almond Salad. Combine the spinach, strawberries, toasted almonds and goat cheese in a large salad bowl. Top with the strawberry basil dressing and serve immediately.

Notes

  • Storage: Store leftover dressing in an airtight container in the fridge for up to 7 to 10 days.
  • Serving Size: This recipe makes about 1 ¼ cup of dressing and enough salad for about two servings. It is assumed a serving of salad dressing is 2 tablespoons. If you want to make this recipe for multiple people, multiply the quantity of salad ingredients, but not that of the salad dressing.
