Recipe Highlights

  • Sweetgreen Copycat — This spicy broccoli is the key ingredient in some of Sweetgreen’s salad recipes, such as their Caramelized Garlic Steak Salad or their Chicken Pesto Parm Salad. If you are looking to make a copycat version of these salads at home, you’ll need to learn to make this broccoli recipe.
  • Spicy Kick — The umami seasoning on this broccoli is flavorful with a tiny bit of a spicy kick.
  • Salad Add-in Or Healthy Side — This spicy broccoli is great as a salad add-in, but it is just as delicious as a healthy vegetable side dish all on its own.

Ingredients & Substitutions

The ingredients needed to make the spicy broccoli.
  • Broccoli: You’ll need a head of broccoli chopped into small to medium sized florets. You can also use pre-packaged broccoli florets.
  • Olive Oil: Use extra-virgin olive oil or another type of oil, such as sunflower oil, vegetable oil or avocado oil.
  • Nutritional Yeast: You should be able to find nutritional yeast in any large grocery store, but if not, you can easily order some online.
  • Garlic & Onion Powder: The umami seasoning uses both garlic and onion powder for flavoring. Don’t use garlic salt, otherwise the seasoning will be too salty.
  • Cumin: Ground cumin is used for the umami seasoning.
  • Paprika & Red Chili Flakes: The combination of paprika and red chili flakes is what gives this seasoning its spicy kick.
  • Salt: Salt brings out all the other flavors in the seasoning. If you want to reduce the sodium, you can cut the amount of salt in half.

Step By Step Instructions

Step 1: Combine the umami seasoning ingredients together in a small bowl. Drizzle the olive oil over the broccoli florets. Take a large pinch of seasoning and sprinkle it over the florets. Use your hands to mix the broccoli, making sure the olive oil and seasoning is spread evenly over each piece.

Step 2: Spread the broccoli florets out evenly on a baking sheet that has been lightly coated in olive oil. Bake at 425F for 15 minutes until they are crispy and lightly browned.

Expert Tips

  • Use the seasoning on other veggies. This umami seasoning is great on lots of roasted vegetables, not just broccoli. Try it on roasted sweet potatoes, roasted carrots or roasted cauliflower.
  • Storing extra seasoning: Store leftover umami seasoning in an airtight container at room temperature. You can make a large batch of the seasoning to save time later on.
  • Reheating Spicy Broccoli: This broccoli is best enjoyed fresh out of the oven. However, if you do have leftovers, you can either eat them cold (if you are meal-prepping salads), or you can reheat them in the air fryer, oven, microwave or a pan. Reheating in the air fryer is my favorite method since it keeps the broccoli crispy.

Recipe FAQs

Which Sweetgreen salads is this spicy broccoli used in?

Sweetgreen’s spicy broccoli is used in their Caramelized Steak Salad, Chicken Pesto Parm Salad and their Super Green Goddess Salad.

How much umami seasoning should I add to the broccoli?

This recipe makes extra umami seasoning. You should add a large pinch or two per broccoli head, but this is up to taste. Keep in mind that the seasoning is fairly salty, so don’t over do it.

Description

This Sweetgreen Spicy Broccoli is an easy copycat recipe for one of Sweetgreen’s tastiest salad ingredients. Topped with umami seasoning and roasted for a crispy and healthy salad add-in.

Ingredients

Scale
  • Umami Seasoning:
    • 4 tsp nutritional yeast
    • 2 tsp onion powder
    • 2 tsp garlic powder
    • 1 tsp paprika
    • 1 tsp cumin
    • 1 tsp salt
    • ½ tsp red chili flakes
  • Sweetgreen Spicy Broccoli:
    • 1 to 2 tablespoon olive oil
    • 1 to 2 teaspoon of umami seasoning
    • 1 broccoli head, washed and cut into florets

Instructions

  1. Preheat the oven. Preheat the oven to 425F. Line a baking sheet with parchment paper, or lightly grease it with olive oil.
  2. Make the umami seasoning. In a small bowl, mix the nutritional yeast, onion powder, garlic powder, paprika, cumin, salt and chili flakes together until well combined.
  3. Prepare the broccoli. Drizzle the olive oil over the broccoli florets, followed by the umami seasoning. Use your hands to spread the olive oil and seasoning evenly over the broccoli florets.
  4. Roast the broccoli. Layer the broccoli florets evenly on the baking sheet, making sure they don’t overlap. Bake for 13 to 17 minutes until they are crispy and slightly browned. Optionally, flip them halfway through baking.

Notes

  • Storing Umami Seasoning: This recipe will make extra umami seasoning. Store the seasoning in an airtight container at room temperature for up to 3 to 4 months.
