Meet Alejandra
Hi! My name is Alejandra. I am the recipe developer, writer and food photographer behind Let Us Munch Lettuce.

As a full-time nurse working 12 hour night shifts, I often find it challenging to find time to make healthy and tasty recipes that are easy to meal-prep for the week ahead.
Let Us Munch Lettuce focuses on salad recipes that are filling, easy to make and that you’ll actually want to eat. These recipes are great for other shift workers, busy moms or any one else struggling to find staple salad recipes to add to their regular meal rotation.
About The Blog
Let Us Munch Lettuce is all about salad recipes — and only salad recipes.
Here you will find salad recipes, power bowl recipes, salad dressing recipes & salad topping recipes for every season of the year so you can use in-season ingredients to save money and make the freshest salads.
Why You’ll Love These Salad Recipes
Here’s why Let Us Munch Lettuce is going to be your favorite salad recipe resource:
- Tasty & Delicious Recipes — There are no mediocre salads here — these salads are tasty and will guarantee you will actually want seconds. These salad recipes are great for both adults and kids.
- Variety — There is a wide variety of every type of salad recipe so you are bound to find some recipes that suit you. There are classic leafy green salad recipes, but there are also plenty of grain bowl salads using quinoa for example.
- Simple Ingredients — All of my recipes contain easy to find ingredients. And if there is a “speciality” ingredient that is not as common, there will always be substitution suggestions so you don’t have to go looking in 10 different stores just to find what you need.
- Customizable — Salads generally contain a lot of ingredients in one bowl (which is what makes them so healthy!). The downside is that you may not have everything on hand. All my recipes contain suggestions for substitutions and optional add-ins so you can create your own customizable salad recipe just to your liking.
- Meal-Prep-able — While some salads are easier to meal prep than others, all of these recipes have tips for how to keep these salads freshest so you can make them in advance for the upcoming week ahead.
