Ingredients & Substitutions

The ingredients needed to make the umami seasoning.
  • Salt: The main ingredient in the seasoning is salt. For a lower sodium seasoning, you can reduce the salt by up to half, or even remove it entirely.
  • Onion & Garlic Powder: You’ll need both onion and garlic powder for the seasoning. Make sure you are using just garlic powder (and not garlic salt), since the seasoning already has a lot of salt in it.
  • Cumin: Ground cumin complements the other flavors in the umami seasoning.
  • Paprika & Red Chili Flakes: The combination of paprika and red chili flakes is what gives this seasoning its spicy kick.
  • Nutritional Yeast: Depending on your grocery store, you should be able to find nutritional yeast in either the baking aisle or the condiment & spice aisle. If your grocery store doesn’t carry it, you can easy order some online.

Step By Step Instructions

Step 1: Add the salt, onion powder, garlic powder, cumin, paprika, red chili flakes and nutritional yeast to a small bowl.

Expert Tips

  • Storing extra seasoning: Store leftover umami seasoning in an airtight container at room temperature.
  • Use the seasoning on other veggies. This umami seasoning is great on lots of roasted vegetables, not just broccoli. Try it on roasted sweet potatoes, roasted carrots or roasted cauliflower.
  • Reduce the salt. If you don’t like salty seasonings, reduce the salt or even eliminate it entirely. Sweetgreen’s umami seasoning is definitely salty!

Recipe FAQs

What is umami seasoning?

Umami seasoning is a flavor enhancing seasoning that is meant to add depth to a variety of recipes.

How is Sweetgreen’s umami seasoning different from other umami seasoning recipes?

Every umami seasoning blend is slightly different. Many umami seasoning blends contain mushroom powder, but Sweetgreen’s version does not. Sweetgreen mainly uses their umami seasoning for seasoning roasted vegetables to be used in salad and their mixture better complements these flavors.

How do you use this umami seasoning?

The best way to use this umami seasoning is for roasted veggies. Coat whichever vegetable you would like to roast in a bit of olive oil and sprinkle this umami seasoning on top. Rub the veggies to distribute it easily. Don’t add any additional salt since this seasoning is already salty.
